In fact, despite the changes in the security measures being taken by the establishments, there are still 23 per cent of the citizens who do not trust these measures. In this regard, it is worth noting that small shops or neighborhood markets have gained more the confidence of consumers in terms of the security of their establishments than the large areas. In response to the question of what establishment offers greater security, respondents have highlighted small trade or neighborhood markets (63%) compared to large areas (35%).

Consumer Habits when purchasing and disinfecting food
About half of the interviewees have been using both gloves and masks to go shopping (46 per cent), and only 3 per cent say they haven't taken any of those two things so far, even if they wash their hands when they get home. Already at home, 39% ensures washing all the containers before storing them in the fridge or pantry, 34% only some, while 26% do not clean anything when arriving. Those who do, usually use a wet cloth with a cleaning product (such as bleach).

On the other hand, some purchasing habits have varied. Thus, 28% of the consumers consulted declare that they have changed from regular brands, either because they are not found, either because white brands are more economical or because when cooking more they have opted for different products. And 14% ensure that their online food purchases have increased.

The consumption of fresh foods has also been altered. Thus 4 out of 10 citizens declare their consumption of frescoes increased. The reasons vary among those who have done so to start a healthier diet (24%) and those who do so to support agriculture and proximity markets (18%). In addition, the mode of consumption of these foods has also been altered after the pandemic. And it is that 25% has varied the way in which it consumed them or the previous preparation mode with measures such as cleaning with disinfectants of fruits and vegetables; eliminating the diet of raw dishes such as steak tartar or sushi, as well as other foods that respondents have not fried, baked or boiled previously. “The consumer is sovereign, and is usually cautious when it comes to consumption. Now with the special circumstances of the coronavirus pandemic, and also before, making sure that it is fed with healthy products and whose provenance it knows” - says Jean-Baptiste Boubault, CEO of El Co-. “We hope that, in terms of eating habits, we will leave this crisis wiser and more conscious. From El Coco we want to help train and educate them in a varied and healthy diet, prioritizing the frescoes and avoiding the ultraprocessed as much as possible.”

Eight recommendations to ensure food cleaning
Care for food security is an aspect in which more efforts must now be repaired, but always with proven methods. With regard to the hygiene of their own and the products they are bought, there is a lot of contradictory information about what and how to clean food. From El CoCo offer these recommendations, supported by their expert nutritionists and by the AECOSAN:

For fresh food
Washing:
put fruits and vegetables under the faucet, even if they are to eat peeled, not to contaminate the knife

Brushed: the hardest peel fruits (calabaza, melon or even others such as cucumber or zucchini) will need a slightly deeper cleaning. It is possible to find specific brushes or use any other type. That is, its use should only be for this task, and then it should be clarified with soap and water.

Rinse: if they are to be eaten raw, it is best to soak the vegetables in water with a few drops of bleach (always ‘legy for food uses’) a few minutes, and then rinse them with running water.

Drying: Dry with disposable kitchen paper, better than with a cloth cloth, unless it has been washed at high temperatures.

Cooking: Since heat inactivates the virus, make sure to cook well meats and fish.

Utensils: Cutting tables, cutters, containers, etc. Wash everything well, and between each use with soap and water. If possible, with hot water.

For boats and containers
Gloves:
If possible, save the products that are brought from the purchase with gloves (some other than those that have been used to go shopping) to avoid contamination with the products.

Clean if they are to be used immediately: In principle, the tests performed indicate that the virus only survives a few hours on the surfaces, but if something is to be consumed quickly, it is best to spend a cloth with soapy water or hydro-alcoholic solution whenever the container is not porous.
