The eight finalist students of “We Like Fish, by OP Anacef” had an hour to cook their recipe among the cheers of their peers, who moved from all the islands. Alejandro Sosa Hernández, 21 years old, will see from now his recipe “Blanck to Black” in the menu of the five restaurants that the Meliá group has in the Canary Islands
The islands are lots of land surrounded by sea everywhere. Thus, it is understood that fish, healthy food where there are, reaches a top-level culinary condition today and always in the Canary Islands. That’s why the “We like fish” jury, the contest organized by the Anacef Producer’s Fisheries Organization in collaboration with Meliá and with eight training centers in Canarian cuisine, acknowledged that it had nothing easy to choose the winner. Finally, and after intense deliberation, they consensualized the name that Luna Zacharias, finalist of MasterChef 8, made public at the applause of the many attendees who approached the Hotel Palacio de Isora to follow the live gala.
Alejandro Sosa Hernández, of the San Cristóbal de Las Palmas Professional Training Centre, was the winner of the contest, which was framed in the promotion of fish consumption of the OP Anacef, thanks to “Black to Black”, an original recipe, that he knew how to cook with skill and professionally present, despite his youth and the pressure to know that the execution of his dish was being followed closely by the public and even from the hotel. The talent deployed by the grancanario, according to the members of the jury, makes it one of the culinary talents of the island to take very into account, given its mastery in employing the precious raw material that it had between the hands and managing the pressure that exists in the kitchens of the great restaurants. From now on, the 21-year-old will see his recipe in the menu of all the restaurants of the Meliá group in the Canary Islands: Palacio de Isora, Hacienda del Conde, Meliá Salinas, Inside Fuerteventura and Meliá Jardines del Teide.
But he wasn't the only winner of the night. His companions, and contrincantes for one day, also demonstrated their worth in the stoves and dazzled with dishes like “Lomo de merluza negro sobre guiso de kala chana” (Jordan Xerach), “Ceviche with tiger milk and fish crack” (Alejandro David Rodríguez), “Lomo de brótola with vegetables and sweet potatoes So it was known by Zacharias himself, on behalf of all the members of the jury formed by Anacef fishing shipowners, the director general of Pesquera Management of the Ministry of Agriculture, Fisheries and Food, the Regional Manager Spain de Meliá, the executive chef of this hotel group and the finalist of MasterChef 8. Everyone agreed to highlight the respect in the treatment of a product that is holy and sign of the Canarian cuisines and the originality to, starting from something so traditional, get to surprise with preparations of excelso flavor. Today students and tomorrow future chefs managed to make each of their dishes a culinary island with fish as a healthy bridge of union between all. And, beyond the main glory to remain the winner, the triumph of the initiative is to have made a promotion of fish as striking as effective.
I remember excited to the palms
In the midst of the gastronomic event there was also time to remind all the palm trees, that in recent weeks they have become involuntary protagonists of the news and the concern of all the Spaniards for the eruption of the Vieja Summit volcano. The affection and solidarity of the present were manifested throughout the gala, since, in addition, one of the contestants and the participating centers is of this island.
Success of the initiative among cooking students
“We like fish, by OP Anacef” involves all the cooking students in the Canary Islands, in whose centers the initiative was presented last September. In principle, four were interested in this original promotional campaign, but thanks to the mouth of the future cooks and cooks, many more asked to be included in this pilot experience that has tested the future chefs of the islands.
In fact, the campaign carried out by the association of fishermen of cephalo-power vessels has two objectives: to promote the consumption of species such as black merluza, brothel or salmonete, on the one hand, and to make known to the new culinary talents hidden in the classrooms of the eight institutes and vocational training centers that offer hospitality studies on the islands.
Canary Islands, among communities that consume less fish
“We like fish by Anacef” is born in response to the report commissioned a year ago by the organization of producers Anacef (OPP43) to an independent consultant to know the habits of islean consumption and to adapt the campaigns to promote fish consumption to the particularities of the residents.
In this regard, the last annual report on food consumption of Spain of the Ministry of Agriculture, Fisheries and Food, referring to the figures of 2020, points out that Canary is the autonomous community that less fish consumes, only 18.9 kilos per person and year. Hence the need to encourage the population to include sea products in their diet. A healthy call to take a look around and, as the canaries have always done, enjoy the fruits of the sea around them everywhere.
