After so hard months of confinement, the prevention of the Covid-19 spread is a subject that is of great concern to many people. During the months they've been home, most people have tried new recipes as a way to hang out. Il Cratere del Gusto talks about what happens with food and contagion and what care it takes to manipulate them
The European Food Safety Authority states that at the moment there is no evidence that the coronavirus can be infected by food or water. There is no evidence that food is a contagion path, however, according to WHO, in any case a number of preventive measures must always be followed to prevent infections or contagions of all types. Good hygiene practices are never enough. The first advice you give Il Cratere del Gusto is not sharing drinks or food.
The same is stated by the American Food and Drug Administration (FDA) in terms of food cleaning: it is essential to follow these four steps of hygiene in the kitchen: clean, separate, cook and cool. The first thing to do is wash your hands before and after manipulating you food. If while the manipulation of food is coughed or sneezed, it is necessary to wash them again.
The surfaces are another element that needs to be disinfected with completeness. Both bleach and ammonia will be two effective disinfectants to eliminate microorganisms. According to the CDC (Centre for Disease Control and Prevention), four tablespoons of bleach per litre of water will be sufficient to disinfect worktops, tables, switches, pomos and other things that are often played in a home. The vinegar is not a good disinfectant, as it does not sterilize any microorganisms.
Fruits and vegetables must be washed with water and some food bleach. When placing these foods in the fridge, you also need to follow some guidelines, such as separating the cooked foods from those who are fresh. The same will happen with kitchen utensils: you have to disinfect them and separate the use of each utensil. To avoid contacting raw food from cooked, you need to use utensils for a few things and others separately. This prevents cross contamination.
Cooking should be done so that all foods are well cooked. Some foods, such as eggs, meat, fish, can transmit some dangerous pathogens for health. The recommended, according to the National Agency for Food, Environmental and Occupational Health (ANSES), is to cook them at 60o C for at least 4 minutes, such as thermal treatment. The dishes, finally, can be effectively disinfected in the dishwasher at about 60o C or more, if possible.
Food handling, an essential aspect for the prevention of Covid-19, according to Il Cratere del Gusto
