Earlier many peopled associated Indian food with too much spice and condiments, however Indian food is now recognized for its varied flavors which range from spicy to subtle. Each region of India has its own cuisine making Indian food diverse and suited to a variety of palates.

Most people however associate Indian food with going out to an Indian restaurant for a hearty meal and do not fancy cooking Indian food themselves. This is because people think Indian food is complicated and tough to make.

 

Though Indian cuisine does make use of specialty spices and blends, these are easily available at most Indian grocery outlets. Once you have the basic spices in place and know some basic Indian dishes you can easily innovate and try out new flavors. This article has simple Indian food recipes that you can try out at home.

  • One of the most popular Indian dishes is chicken curry. This simple dish is a blend of various natural condiments and spices and is commonly made in many house-holds in India. this recipe is simple to make and imbibes many rustic flavors of Indian cuisine. To make chicken curry, you will need chicken that has been cut into medium pieces. you can also use boneless chicken for this preparation. However, chicken pieces that have bones taste best in an Indian style chicken curry.
  • Start with grinding fresh ginger and garlic. Chop 2 red onions very finely. Begin making the chicken curry by heating oil in a large pan. Once the oil heats, add to it some whole spices such as cloves, cinnamon and bay leaf and whole cardamom. Allow the spices to crackle and then add the chopped onions and the ginger-garlic paste. Let the onions and the ginger-garlic paste sauté till the onions turn brown in color. The onions must become dark brown in color but must not get burnt. You must constantly keep stirring the onions to prevent them from getting burnt.
  • After this, add salt, paprika powder, coriander powder, black pepper powder and an Indian spice blend called Garam masala powder. Sauté the spice powders very well with the onions. This step is important as we want the spices to get nicely roasted with the onions. If not sauteed well, the spices can impart a raw taste to the curry. After this, about one cup fresh tomato puree.
  • You can also add roughly chopped tomatoes instead of tomato puree. Let the tomato puree cook well with the onions and spices. This will take 5-7 minutes and you must constantly keep stirring the tomato puree with the onions and spices to prevent the curry from sticking to the bottom of the pan. Once the tomato puree gets well done oil will separate from the curry and it will become a thick cohesive mass. This is an indication that your gravy has been cooked to perfection.
  • After this, add the chicken pieces and add 2 cups of water. Let the chicken pieces cook in the gravy till they get done. Once done, remove from flame and garnish with freshly chopped cilantro. Serve this chicken curry hot with naan bread or plain rice.
