We all love to order duck when we eat out, but cooking duck at home might seem like a daunting idea. But actually it is not very difficult to cook duck at your own kitchen, and besides you can impress your friends with your culinary skills, the next time you throw a dinner party.

Duck meat is a much healthier option than pork or beef, because duck is considered as “white” meat and is packed with essential nutrients like protein, vitamins, iron, zinc etc. It also has its own distinct aroma and flavor which goes well with both fruits as well as vegetables. The dark red color of the meat gives an attractive and appetizing look to the dinner table.

Although there are several ways to make duck, roast duck is one of the most preferred recipes for a home cooked meal. Prepared with a perfectly chosen whole duck and infused with herbs and spices, duck roast will give out a wonderful aroma which will tantalize all your senses.

 

So go ahead and prepare a roasted duck for your next lunch or dinner party and surprise everyone with your culinary skills. Although a whole duck is generally used for roasting, there are other variations with different meat portions as well. The below recipe uses the leg portions of a duck which will yield 4 servings of two legs for each portion.

Instructions

  • You will need 8 pieces of duck legs, 1 tbsp of mixed spices, 1 bottle red wine, 3 tbsp raspberry sauce, 6 garlic gloves, and a bunch of rosemary herb.
  • Layer a roasting tray with the rosemary and garlic cloves. Pre-heat the oven to about 200° F and place the duck legs inside the tray. Set the oven on roasting.
  • Place a pan on the gas and simmer the wine and raspberry sauce till it yields a consistent texture.
  • Remove the roasted duck legs from the oven after 1 hour and scoop the fat away with a spoon. Now layer the duck legs with the wine mixture and return to the oven for another 15 minutes of roasting till the sauce is thickened and absorbed by the meat. Remove from the oven and enjoy your roasted duck with a salad on the side. You might also like some mashed potatoes or sautéed vegetables to go on the side. Glazed turnips with potatoes are the side dish that the French prefer with their roasted duck.

  • Because of the distinctive flavor of duck meat, you have the liberty to experiment with different sauces. Try balsamic, wild berries, redcurrants, apricots, oranges etc. Go with your own taste preference and select the sauce you like.
  • Duck meat should immediately be refrigerated after getting it home from the supermarket, or it might go bad.
  • Duck meat contains a lot of fat which you can reduce by getting rid of the skin.
  • If your meat portion is a little dry, try marinating in the sauce overnight. It will help the juices to enter the meat making it more tender and succulent.
