The flavors in Thai cuisine balance each other very well which makes Thai food very popular with people everywhere. Thai curry is the most celebrated Thai dish which is very easy to make. You can make this Thai curry either with chicken or your favorite sea-food such as shrimps or fish.

Thai curry is essentially made from a Thai curry paste which is a mix of fresh herbs and spices. This article tells you how to make the basic Thai curry paste. The content then outlines the recipe of Thai chicken curry.

  • To make the Thai curry paste, you will need 3-4 fresh garlic cloves, 2 spoons fresh ginger root, 1 spoon paprika flakes, 1 stalk fresh lemongrass, 1 spoon fresh lemon juice, 1 stalk fresh green onion, 1 Serrano chili chopped, salt to taste, 1 spoon fresh cilantro leaves, and little water.
  • Begin making the Thai curry paste by making a coarse paste from the above mentioned ingredients. This is the basic Thai curry paste which can be used to make various Thai dishes.
  • To make Thai chicken curry, you will need boneless chicken breast, 5-6 spoons of the prepared curry paste, 2 cups of mixed diced veggies, 1 spoon fish sauce, and 1 spoon soy sauce, and 2 cups coconut milk.
  • Begin making the Thai curry by cutting two boneless chicken breasts into fine strips. Marinate the sliced chicken breasts with the prepared Thai curry paste for half an hour.
  • Next, heat some oil in a wok and add to it some diced veggies of your choice. You can include diced carrots, bell peppers, broccoli florets, etc. Peanut oil is commonly used in Thai cuisine for added flavor. You can however use any vegetable oil of your choice if you are unable to find peanut oil. Stir-fry the veggies for a few minutes till they get lightly cooked. After this, add 4-5 spoons of the prepared Thai curry paste, 1 spoon fish sauce and 1 spoon soy sauce. Stir-fry for this sauce for 3-4 minutes and then lower the flame.
  • Add 1-2 cups of fresh coconut milk and keep stirring on low flame to obtain smooth gravy. The coconut milk will balance the spiciness of the curry paste beautifully to make this dish taste delicious. If you are unable to find coconut milk, replace it with chicken broth. Coconut milk however gives this dish its true flavor, so try as much as possible to use only coconut milk.
  • Next, add the marinated chicken slices and let the chicken cook in the gravy for 7-8 minutes till it gets completely cooked. Once done, garnish the Thai curry with chopped cilantro and fresh red bell pepper slices before serving. Thai curry goes best with steamed white rice. You can also serve this Thai curry with saffron flavored Basmati rice.
