When the weather is hot, grilling is the most popular cooking technique used around the world. And cooking over an open fire can get adventurous too sometimes. You can grill chicken, shrimp, and just about anything you love to eat. Here we will list down steps to grill like a pro.

  • The spot- Select the spot where you want to grill your food. It should be away from any bushes, building or any overhanging material or even trees.
  • Grilling tool- There are portable charcoal grills or picnic grills for a smaller party and covered cookers and gas grills for a larger crowd. Gas grills are the most popular choice these days, whereas charcoal grill gives you the ‘real’ grilling experience. The choice is yours. You would also need long spatulas, tongs with hooks, meat thermometers, heavy duty mitts, disposable foil drip pans, water pistols or spray bottles, wire baskets, skewers, grill toppers, rib racks and basting brushes.
  • Start the fire- For charcoal grill, arrange the coal in pyramid shape, douse the fluid given, wait for a minute and start the fire using a long match. It will take nearly 30 minutes for the grill to get ready to cook. For gas grill, open the lid and turn on the gas after reading the manual. Gas grills usually require preheating for 15 minutes.
  • Cooking technique – You can select between direct heat cooking (directly on the rack above the hot coal) and indirect heat cooking which is mostly covered (for turkey, meat etc).
  • Maintain the temperature- For gas grills if about 75% of the ceramic coal is coated with ash then it is ready for direct grilling. For charcoal you can place your palm facing downwards above the coal and check how fast you need to remove it. If within two seconds you are forced to move your palm away then the grill is very hot and ready.
  • Start cooking – Now when the temperature is right and the grill is hot, start cooking. Never leave your grill unattended. Use a timer to check your food.

  • When using charcoal grill, open both top and bottom vents.
  • Remove the accumulated ash to maintain proper airflow.
  • Wait for atleast ten minutes before turning meat or fish.
  • Total cooking times depends on the instructions given for the recipe as well as on the weather.
  • Sugar and fat contained in sauces will result in flare-ups and burns. So avoid them while grilling.
  • Clean your grill thoroughly after each and every use.
