To make bruschetta at home, obtain fresh ripe tomatoes. Remember that tomatoes are the key ingredient in a bruchetta and hence procure the best quality tomatoes. Roma tomatoes are the most preferred variety to make bruschetta. You can however use any variety that is fresh and ripe.
Start by preparing the tomatoes. To do this, boil water in a vessel and into the boiling water drop the tomatoes. Let the tomatoes cook in the boiling water for not more than 1 minute. Immediately remove them from the hot water and wash them under cold water. Once the tomatoes have cooled, peel the skin from them and chop them into fine pieces. Take the chopped tomatoes in a bowl and to this add a few cloves of freshly minced garlic, about 5-6 leaves of freshly chopped basil, salt, pepper and olive oil.
Cut the French bread into slices and lightly toast them in the oven. You can brush a little olive oil on the bread slices before you toast them. This will impart great flavor to the bruschetta. The bread should only be lightly toasted. Ensure the bread does not get burnt or turn dark brown in color.
To serve the bruschetta, place the toasted bread slices on a white serving plate. Place a little of the tomato-basil mix on each bread slice. Garnish the bruschetta with little grated parmesan cheese and freshly chopped basil.
Assemble the bruschetta minutes before serving to prevent them from becoming soggy.
You can come up with your own variations of the bruschetta and add finely chopped sautéed mushrooms or sautéed bell peppers to the tomato-basil topping. Though not traditionally done, this gives an interesting twist to the usual bruschetta recipe.
