  • To make chaat, boil around 2-3 medium sized potatoes. The potatoes must be cooked but must not turn mushy. Once the boiled potatoes cool, peel them and cut them into small cubes. Heat oil in a pan and deep fry the potato cubes till they turn golden brown on the outside.
  • Drain the potatoes on a paper towel to remove excess oil. Also chop finely one red onion, tomatoes, few Serrano chilies and little fresh coriander.
  • To make the chaat taste delicious and authentic, prepare date-tamarind chutney. You will need to cook about one cup seedless tamarind with ½ cup pitted dates and jaggery. Use a little water and cook till the dates and tamarind become soft. Once the dates and tamarind become mushy, remove from flame and let it cool. Use a blender to make a smooth sauce and season the chutney with salt, paprika powder and cumin powder. You can also buy this chutney ready-made from Indian grocery stores.
  • To assemble the chaat, in a serving plate, place few of the fried potatoes, top this with chopped onions, chilies and tomatoes. Drizzle the tamarind-date chutney liberally over the potatoes and garnish with chopped coriander leaves. You can use mint-coriander chutney too for added flavor.
  • For a variation use sweetened yogurt to top the chaat in addition to the tamarind and mint chutneys. You can use your own creativity and add chutneys of your choice such as mango chutney. Also try and add some cooked chickpeas to this recipe. This will make your chaat delicious and will add a little crunch and bite to the dish.
