This simple yet delicious dish can be had as main course or as a side. Cheese pasta makes for a tasty entrée when served with a side of garlic bread-sticks and an Italian salad.

This dish can also serve as a tempting side to meat-balls or any Italian main course meat or poultry dish. This recipe is also highly customizable and you can modify the ingredients to suit your family’s palate. It is simple and quick to make this delicious recipe at home. This article outlines a step-by-step procedure to make cheese pasta.

  • To make cheese pasta you will need the following ingredients: 1 pound pasta of your choice, 2-3 cups boiling water, salt to taste, freshly grated black pepper, 3-4 spoons extra-virgin olive oil, 2 sticks butter, 2-3 fresh garlic cloves finely chopped, 2-3 spoons flour, 1/4th cup milk, 1/4th cup sour cream, 3-4 cups grated Parmesan cheese, 2-3 cups grated cheddar cheese, 2 cups Portobello mushrooms, and 1 cup chopped red bell peppers.
  • To make the cheese pasta, first ready the pasta. For this, take water in a large vessel and add salt and little olive oil to it. Adding olive oil will give the cooked pasta great flavor and prevent them from sticking together. When the water comes to boil, add the pasta and allow it to cook in the boiling water for 5-8 minutes. The pasta must become tender but still remain firm. When the pasta is done, remove from stove and drain the excess water. Keep the cooked pasta aside.
  • Next, begin making the sauce for the pasta. For this take, butter in a pan and allow it to melt. Once the butter melts, add flour and sauté it in the butter till it changes color slightly. The raw smell from the flour must disappear. Next, add the milk and keep stirring so that no lumps form.
  • Once the mixture thickens slightly, remove from stove and add the sour cream. Mix everything well to form a smooth creamy sauce. Season with salt and freshly ground black pepper. Add the grated parmesan cheese and grated cheddar cheese to this sauce and once again mix well. In addition to these two cheese varieties, you can use other cheese types as well.
  • Next, ready the veggies to go with the cheese pasta. For this take olive oil in a pan and sauté freshly chopped garlic in it. Ensure you do not burn the garlic. After this, add the chopped mushrooms and red bell peppers. Sauté the veggies till they become slightly tender. If required, you can also add fresh or dried herbs such as parsley, basil, thyme, etc.
  • To assemble the cheese pasta, take the cooked pasta in a large bowl and add the sautéed veggies. Top with the prepared creamy cheese sauce. Mix everything well so that the pasta and veggies get coated with the cheese sauce.
  • Place the pasta mix in a baking tray and top with grated parmesan cheese. Bake in pre-heated oven at 225 degree Fahrenheit for 10-15 minutes till the parmesan cheese melts. Serve warm with fresh bread-sticks.
