How To Make Chicken Noodle Soup

 

 

 

Soups are generally considered to be healthy food. But it contradicts the notion of healthy foods. Soups are quiet soothing for the taste buds. They have an array of flavours, like hot and sour, sweet and sour etc. Chicken, shrimp, eggs, vegetables all can be used to create this dish. But still this preparation is suitable for all health condition.

You are sick or you just want to enjoy a healthy yet tasty dinner, then your answer is chicken noodle soup. Especially if you are down by cold then this is the perfect healing for you. No wonder in Jewish it is called ‘Jewish Penicillin’.
The following recipe is from scratches and so it will take bit of patience. But the outcome will compensate all your hard work.

Instructions

  • You will need: one medium size chicken, 3 onions,3 carrots,2 ½ celery ribs, 3 sprigs of parsely,2 quarts of chicken broth, 1/2 teaspoon of dry thyme,1 bay leaf, 2 cups noodles, salt and black pepper, water (as required), 3 tablespoons of butter.
  • To make the soup first chop the onions. Cut the carrots into rounds and the celery ribs into circles. Now put a pot on medium heat and add the butter. After the butter is melted, add the onions, celery, and carrots. Keep stirring and let it cook until the vegetables are soft. Cut the chicken into 10 pieces. Do not remove the fat. Now add this chicken to the pot and add the broth too. You can make the broth freshly at home or you can use the canned one also. Also add cold water. The water should be sufficient to cover the ingredients. And the water level should be ½ inches high from the ingredients. Now increase the heat let it boil. You will see that foam is building on the surface. Remove them. Now add the thyme and parsley. After 1or 2 minutes drop the bay leaf. Cook the chicken on low flame until it has become succulent.
  • After the chicken is cooked perfectly turn off the heat. Take out the chicken and let it cool down completely. Discard the bay leaf and parsley. Do not stir the soup for a few minutes. You will see the fat to rise at the top. Remove the fat. Remove the chicken skin and bone and cut them into small pieces. If you want you can shred them too. Just tear the chicken with hand. Add the noodles and let it cook uncovered. But check the packet for the cooking time. Because different noodles have different cooking time. Now add the chicken pieces and add the salt to taste. Also add the freshly crushed black pepper. Check the seasoning. Also if you are using canned broth it is better to check. They are already having some seasoning. You can garnish with some freshly chopped parsley.
  • Your healthy and delicious tasty dinner is ready. Serve it hot. You can have it with toasted bread or just itself. It is a whole hearty meal.
