Many people think gelato to be lower in calories, though this may be marginally true, gelato is still on the higher side of calories.

However, gelato has great texture and is very light and fluffy – making it a treat to eat. Gelato is traditionally made with vanilla flavor. However, you can add your own flavors and create own version of the gelato. This article has step-by-step instructions on how to make gelato at home.

  • To make gelato, start by combining 2 cups milk, 1 cup sugar and 1/4th cup evaporated milk in a large pan. Allow this mixture to simmer on medium heat for some time till the sugar completely dissolves in the mix. Once done, remove stove and let the mix cool a bit.
  • Take 8 egg yolks in a bowl and whisk them till they become thick. Use an electric blender to ensure the eggs get whisked really well. Now, add the sugar and milk mix to the beaten egg mix gradually. Whisk every time you add a small quantity.
  • Transfer the egg yolk and milk mix to a pan and let it simmer on medium heat till it becomes thick in consistency. Now add about a cup of cream and few drops of vanilla extract to this mix. Blend all ingredients very well. Refrigerate for 48 hours.
  • Just an hour or two before wanting to serve the gelato, remove from freezer and process the gelato in an ice-cream maker. There are specialty gelato makers available in the market that will bring the right consistency to the gelato. However, an ice-cream maker works fine too. If using an ice-cream maker, the trick is to churn the gelato for more than half hour in the ice-cream maker to ensure it becomes fluffy and light.
  • You can make gelato in a variety of flavors such as chocolate, fruit flavors, coffee, etc. If making chocolate gelato, add a cup of chocolate syrup when churning the gelato in the ice-cream maker. You can also add fruit purees such as mango, strawberries, bananas, etc to make your fruit flavored gelato. Serve the freshly churned gelato immediately.
