To start making oatmeal cookies, take a mixing bowl and add 2 cups oats, 1 and half cup flour, 1 teaspoon baking soda and a pinch of salt. Mix all these ingredients well. Adding a little cinnamon powder to the flour mix will give your cookies a nice sweet-spicy flavour.
In another mixing bowl, combine 1 cup brown sugar with half cup white sugar. Add a cup of softened unsalted butter to the sugars. Whisk these ingredients very well till the butter becomes fluffy and the sugars get completely mixed with the butter. Now break in 2 eggs to this mix and also add a few drops of vanilla essence. Blend the eggs well with the sugar and the butter.
Now, begin adding the dry mix of oats and flour to the butter-eggs and sugar mix. Add the flour mix gradually so that all ingredients get mixed evenly. Keep blending the flour with the wet ingredients each time you add a little. Finally give the cookie batter a good whisk on the low to medium speed of the electric blender for 2 minutes.
Before baking the cookies you can add your favourite candied fruit to the dough. Resins are a classic combination with oatmeal cookies. However, you can experiment with almonds, dried cranberries, peanuts, or any other dried or candied fruits of your choice.
Next, drop the cookie batter into greased cookie moulds and bake in a pre-heated oven for 15 minutes till the cookies are cooked and turn crisp and chewy. You could also use a baking tray lined with butter paper and drop the cookies into round shapes in case you do not have a cookie mould. Serve the cookies fresh straight out of the oven with a cup of hot coffee.
