Tortillas are Mexican in origin. They have adapted well to be a food that can be enjoyed on the go, provided the tortillas themselves are ready. Tortillas are a base on which you can layer your choice of toppings. Made of corn they are healthy and tasty.

One can make them and store them easily so as to have quick meal fixes when time is running out.

Instructions

  • The things needed for making tortillas are a bowl, a special corn flour known as Masa Harina(a special type of corn flour), a tortilla press ( you can use a rolling pin and wax papers to roll the tortilla out to the desired thickness), 1/4 tsp of baking soda, 2 cups of very warm water, dish towels, wax paper, a skillet.
  • Take two cups of the masa flour, with baking powder and 1 to 11/2 cups of water.Mix these well.Rest this mixture for 5 minutes.Knead the dough for some time.
  • Knead the dough with the palms and fingers of your hands to mix all the ingredients well.Add water if the mixture seems to dry to hold together.Add more flour if it becomes too sticky.
  • Divide up the flour into 16-18 golf balls sized spheres.Taking the wax paper, size it up to the measurements of the tortilla press.Open the press, place a wax paper on the base.
  • Place the masa ball on the wax paper.Cover it with another wax paper.Close the press. Press down till the dough has expanded to a thin layer of nearly 6 inches.Heat the skillet till very hot.Take the tortilla in your hand and place it on the skillet after removing the wax paper from both the sides.
  • Cook the tortilla giving 30-60 seconds to each side.The tortilla’s appearances should be lightly toasted with tiny bumps of air pockets.These ready tortillas can be kept warm covered with a dishtowel. These can also be refrigerated and reheated before serving.
  • Tips and Warnings

     

  • The water added to the mixture should be in acccordance to the instructions on the packet.Brands may vary with amounts of water needed.
  • The Tortilla pressing should be coordinated with the tortilla cooking, so one is on the skillet and the next is ready to go.
