The Cooperativa Ganadera del Valle de los Pedroches (COVAP) is a 60-year history firm that was born in Pozoblanco (Córdoba) by a group of cattle ranchers united by a common goal: to preserve the privileged ecosystem of the dehesa cordobesa and to contribute to the economic and social development of its environment through the production and marketing of the a product of quality guaranteed from the origin. Thanks to your traceability project, unique in the market, it is possible to individually locate the history of each of its pieces, all of them from 100% Iberian pigs registered in the genealogical tree, raised free and fed to the feet of hundreds of oaks of the dehesa of the Pedroches, which occupy an area of more than 300,000 hectares.
The effort of the farmers of the cooperative and their experience, inherited from generation to generation, as well as their commitment forever to good livestock practices has made Ibéricos COVAP obtain the certificate of animal welfare accrediting compliance of the welfare protocol requirements in their 100% Iberian breed pigs.
For the next Christmas Ibéricos COVAP launches its Luxury Collection AX 2019, the highest selection of 100% Iberian acorn with 5 exclusive packs with products from 100% Iberian pigs.
This limited edition consists of a total of 300 unique and exclusive pieces selected by their ham masters, with more than 46 months of slow healing and balanced by the Denomination of Origin the Pedroches. All parts count with an inviolable flange and a traceability certificate from the origin where the customer will be able to obtain all the information of his piece as the name of the farm in which the 100% Iberian pig is raised, the total days of mountaineering he could enjoy, and the data on his healing process in the natural wineries.
Pack AX Luxury 100% Iberian acorn ham high expression of the Pedroches Add 2015
It's the whim of this selection. This lot “AX” includes an exclusive 100% Iberian acorn ham High Expression of the Pedroches COVAP supported by the Denomination of Origin the Pedroches, of the vintage 2015 and with a weight that ranges between 7 and 7.5 kg. Choosed by the COVAP teachers, the piece has been slowly cured for more than 46 months in natural wineries, following methods of craft processing. The Iberian pack ideal for these Christmases is completed with a black and gold custom case, professional ham knife made in Spain in high quality steel and leather case, 100% cotton embroidered in gold silk yarn relief and a gift box with exclusive design. 100% Iberian acorn pack
Lovers of Iberian sausages can choose between lots of different composition. For example, the one containing a 100% Iberian acorn loin High COVAP Expression (500 g approx.), an Iberian acorn cane with Pymenton High Expression COVAP (350 g approx.) and an Iberian acorn cane without paprika High Expression COVAP (350 g approx.), all of them are individually shaped.
