After playing with a new vanilla cake recipe that is extremely soft and wet, I decided to turn that recipe into different cakes for the whole month of July. I called July like the month of the cake celebrating my birthday.


This basic marble cake is probably my favorite of all the cakes so far. It is tender, spongy, has an incredible flavor and glaze is out of this world.

Because this recipe works

  • Chocolate dough is made with cocoa powder instead of melted chocolate. The melted chocolate mixture in the cake dough changed the texture of the cake. I didn't like the variation of textures.
  • The biscuit is made with oil and milk serum so the texture is super soft and spongy.
  • The cake flour is used to give the cake crumb a fine texture.
  • Two different types of chocolate are used in the glaze so it is not too sweet.

I can't have enough of this marble cake. I mean, look at that beautifully mottled look. And the taste is a beautiful combination of vanilla and chocolate.

It took me a few attempts to get the cake exactly as I wanted it. I played with the use of melted chocolate for the chocolate portion of the cake dough. In fact, I didn't care about the texture in contrast to the vanilla cake. The chocolate went more like a brownie and wanted both to be equally soft and spongy.

I discovered that the cocoa powder provided exactly what I was looking for. It is chic and remains soft. I couldn't be more satisfied with the result.

I used my new and improved vanilla cake to make this recipe. I added cocoa powder to a small portion of the cake dough. This greatly facilitates the process of making the marble cake. You don't have to get in two separate masses.

When making the recipe, make sure to follow every step exactly as it is written and always use ingredients at room temperature. When all the ingredients are at the same temperature, they emulsion better. This leaves you with a lush and silky cake.

What filler goes better with the marble cake?

It's best to use a filling that has the same flavor as the baked cake. The classic vanilla and chocolate marble cake should use chocolate sweet glaze.

How do you make a wet marble cake from scratch?

To keep your cake wet, use a combination of butter, oil and milk serum in the dough. These fats add additional moisture that will make the crumb smooth and tender.

To bake this marble cake you will need:

  • Moldes forcakes9 inches:I baked the layers of cake in two round 9-inch cake moulds. I prefer the aluminum pans to the antisticks.
  • Batidor standing:I always prefer my KitchenAid standing blender to bake. It simply makes the process much easier.
  • Pallet accessory:for the pie dough and glaze, I like to use the pallet accessory in the foot blender.

The mass: It is very easy and does not require you to make two different cake masses. A mass is all you need. Powder cocoa is mixed in a small portion of that dough to create the chocolate piping.

Theglaze: glaze is out of the world and contains only two ingredients. Just melt the chocolate and let it cool. Then mix it with butter to create a magnificently lush glaze.

Step 1: mix the wet ingredients

Be sure to start with ingredients at room temperature. It is crucial for the cake mass to blend properly.


Beat butter, oil and sugar at medium-high speed until they have a pale color and a spongy look. This takes 3 to 5 minutes.

Add one egg at a time and mix at medium-low speed for 20 seconds after each addition. Then add the vanilla extract.

Step 2: Mix the dried ingredients and add them to the wet ingredients.

In a separate bowl, mix the flour very well, baking powder, sodium bicarbonate and salt. It is important to ensure that all yeast is distributed evenly throughout the flour.

Add half the flour to the butter mixture and mix at medium-low speed until it is incorporated. Add the milk serum followed by the remaining flour. Mix at medium-low speed until combined. Be careful not to mix too much.

Step 3: Make Chocolate Mass

Remove 3⁄4 cup of cake dough and place it in a small bowl. Add the cocoa powder and whisk until it is very well combined.

Step 4: mix the vanilla and chocolate masses together

Lightly grease and enharine two 9-inch round baking molds. I also like to lin the bottom of the mold with parchment paper to make sure the cake doesn't stick.

Divide the vanilla dough evenly between the two moulds. Drop tablespoons of chocolate dough evenly on the vanilla dough in both moulds.

Use a butter knife to spin the chocolate dough in the vanilla dough. Be careful not to rotate too much or you will end up mixing the two masses instead of creating a marble effect.

Step 5: bake the cake

Make sure the oven is preheated to 350°F. Bake the cakes for 20-25 minutes. They are ready when a stick inserted in the center comes out with just a few wet migas attached.

Cool the cakes in the molds for 10 minutes. Remove them and place them in a grid to cool completely.

Step 6: Make the Glaze

While the biscuit cools, prepares the glaze.

Be sure to use soft butter that doesn't melt. You shouldn't have an oily shine. But it must be soft enough to bend easily. If it is oily, it will be too soft and the glaze will loosen.

Melt the chopped chocolate in a heat resistant container placed on a pot with barely boiling water. Keep stirring the chocolate while melting to prevent it from gripping.
