Bizkarra, in collaboration with Tecnalia, creates a lemon jam and renews its range using as sweetener the root of the heel

The bakery and bakery worker Bizkarra has innovated again creating some added sugarless jams that incorporate as sweetener root of yacon, a Andean tuber with many properties. The novelty has been the result of a three-year project Technological Centre and supported by the Basque Government through the Hazitek program of the SPRI Group.

 

This collaboration has allowed Bizkarra to create jams without added sugars, avoiding intensive sweeteners and using exclusively natural plant ingredients. The project has created a lemon jam that brings together all the organoleptic and nutritional characteristics sought. The recipe has subsequently been taken to all sugar-free jams that are made in the workman. In total, the range includes six varieties: apricot, plum, raspberry, strawberry, lemon and mandarinthey just showed up in their physical stores and their online shop.

 

The jams are made from traditional form, with fresh fruit and two ingredients that replace sugar in all its properties: natural vegetable fiber, to get the texture and color, and yacon root as sweetener, to get the flavor.

This has been achieved using Yacon root, a tuber that is cultivated in the Andes mountain range and consumed as fruit or juice. Its roots are edible and with large tubers of up to 1kg. Its properties are derived from its components: it contains probiotics, fiber and antioxidants in the tubers, as well as vitamins B1, B and C in its root, among other elements.

With these ingredients a lemon jam without added sugars, a taste that in the workman Bizkarra had never been realized. Looking to innovate also in this unusual variety, all the details of the recipe have been defined to obtain a fresh and citrus flavor with a balanced sweetness, which is very pleasant to the palate. This balance can also be seen in the other varieties of the renewed range, highlighting the natural flavor of the fruit.
