Tofu, basil and cherry tomato cream sauce (like mascarpone, but vegan)

I love pasta in all its forms and all its preparations. Now that I haven't been able to eat gluten since January (the Digestive System has already warned me in the lastlast revisionn that removes gluten from me forever) I had to learn how to cook gluten-free pasta. It seems absurd, but it is not: so that it does not get caked, you have to follow the manufacturers' instructions to the letter. And two tricks that I do: a little bit of extra virgin olive oil in the cookingn, next to the salt;and when iscooked (to meI love it al dente), I wash it well with cold watera, until the water runs clear.SoIt fits perfectly and nothing sticks to me.

As for the sauces, this is one of my favorites.Contains a lot of proteinna, fiber, calcium and lots and lots of flavor. It is also ideals to do mores quantity and leave it in a lunch box for a few days.as in the fridge to have it already prepared (those who followed mes on Instagram I knowis that I love the "batch cooking”);You can even do it with the pasta already integrated.ohit looks goodsima and you just have to heat up a bit and enjoy a plate of 10!

Before continuing, I want to invite you to my Instagram (@eltiovivorojo), where I couldis to find many recipes that I make in the dayto to sayat home, all simple and very tasty:
